Chicken Tikka Kebab + Source(Mint and Cilantro Chutney)

Ingredients :

250 gms. Chicken Breats

1 cup yoghurt

1 teaspoon ginger - garlic paste,

1/2 teaspoon Salt or according to tast, Red Chilli Powder,Tandoori masala Garam Masal

1 Teaspoon Lemon Juice.

Marinade : Mix the yoghurt, ginger garlic paste, salt,red chili powder and Tandoori Masala powder.

Method :

1. Prepare ginger garlic paste by grinding , ginger : Garlic = 1:1 together.

2. Wash and cut the chicken into 2 to 3 inch pieces

3. Prick all the pieces with a fork. This is to ensure that the chicken absorbs the spices evenly.

4. Mix the marinade well with the chicken and let it marinate for at least 2 hours. It can also be left over night in the refrigerator

5. Take the chicken pieces out of the marinade and place them on a grill rack (or a large colander) for 10 - 14 mins so thant the excess marinade drips out.

6. Now if using a charcoal grill, you can place the chicken pieces on skewers and grill them. If using an over, preheat the oven to 350 ‘C degree, and place the pieces on the rack, place the rack in the oven and grill for 15 - 20 mins. Or you can fry too.

7. Turn the pieces during grilling so that the chicken gets cook evenly.

Mints and Cilantro Chutney

Ingredients :

1 Bunch fresh mint

1 Bunch fresh coriander (Cilantro)

2 to 3 cloves garlic

1 piece of ginger

2 green chilies

1 teaspoon sugar

1/2 teaspoon salt

2 teaspoons lime juice

1/2 cup yoghurt

Method:

1. Cut off roots from both mint and coriander.

2. Chop roughly the mint and coriander

3. Peel garlic and ginger and remove stalks from green chilies.

4. Cut them into smaller bits

5. Place the mint,coriander,ginger,garlic,green chilies,sugar and salt in a food processor

6. Add the remaining ingredients and grind into a smooth paste in a food processor.

7. Chill and Serve.
